Southern Buttermilk Biscuits

Makes 6 Biscuits

Biscuit Dough:

2 Cups (240g) All Purpose Flour

1 teaspoon (7g) Salt

1 Tablespoon (12g) Sugar

1 Tablespoon (12g) Baking Powder

ΒΌ teaspoon (2g) Baking Soda 

6 tablespoons (77g) Unsalted, Cold Butter 

ΒΎ cup (200g) Buttermilk

 

Instructions

  1. Preheat your oven to 450 degrees and get your parchment-lined baking sheet ready. 

  2. Add ALL dry ingredients (flour, salt, baking soda, baking powder, salt) to a mixing bowl and mix well with clean dry hand, whisk, or fork

  3. Butter - put your stick in the flour mixture and coat all sides - then cut into small cubes. Add to flour mixture and pinch cubes into dough until pea-sized.
    Put flour/butter bowl mix in the fridge or freezer for a few minutes to make sure butter is solid & cold.

  4. Make a well in your bowl of flour and add your buttermilk. Mix JUST until the buttermilk is absorbed.

  5. Dump flour mixture out onto your counter and gather/push it into piles, pulling & pushing the dry flour pieces to the dough - gathering it into a ball.

  6. With floured hands - pat down the dough into a rectangle-ish shape that is about an inch high.

  7. Cut dough into 4 pieces with a knife or bench scraper and stack them one on top of the other & pat down back into a rectangle shape.

  8. Cut dough into 6 even squares. 

  9. Place biscuits and any scraps on a parchment-lined baking sheet with sides of biscuits touching and spread melted butter on top

  10. Bake at 450 for 12-15 minutes or until the tops start to lightly brown.

  11. EAT THE BISCUITS!
