Mexican Black Beans

Ingredients:

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (15 oz) can refried black beans

  • 1 (8 oz) can corn, drained (optional!)

  • 1-2 teaspoon cumin, to taste

  • 1-2 teaspoon Knorr chicken bouillon powder

  • 1/4 cup water (or more as needed)

  • Optional: 1 tablespoon butter or oil for richness

Instructions:

  1. Heat It Up – In a medium skillet over medium heat, warm the butter or oil (if using).

  2. Add Black Beans & Corn – Toss in the black beans and corn (if using corn), stirring to combine.

  3. Mix in Refried Beans – Add the refried black beans, stirring well.

  4. Season It Up – Sprinkle in cumin and Knorr bouillon powder. Stir to incorporate.

  5. Thin It Out – Pour in 1/4 cup of water (or more as needed) to loosen the mixture to your desired consistency.

  6. Simmer & Stir – Let everything heat through for about 5 minutes, stirring occasionally.

  7. Taste & Adjust – Add more cumin, bouillon, or even a dash of black pepper or chili powder. if desired.

  8. Serve Hot – This works great as a side dish, dip, or filling!
